As the wise Samuel Johnson once said, “People need to be reminded more often than they need to be instructed.” So as we return to the salad theme, FFA reminds you—although you probably need no instruction—about the Crunchy Broccoli and Cauliflower Salad made popular in the Midwest.
This simple recipe has been around a lot longer than I have and appears at many summer barbecues, Lutheran pot luck dinners of your childhood and the like. Somewhere or another you will or have encountered it. So why not try making it? Its delicious crunchy tang bears creating and eating at least once in your life time. If not twice. Or three times. I’ve lost count.
C’mon, let’s not admit to being food snobs: this is one salad the French cannot outdo us on. So why not join the ranks and lift the American cuisine flag up this summer over your picnic table by joining in and creating this Crunchy Broccoli and Cauliflower Salad? Once you make the commitment, this Americana mainstay from the Midwest will bring taste, vitamins and minerals, lots of brassica fiber and plenty of pizzazz to your table. Crunchy Broccoli and Cauliflower Salad with Bacon
Ingredients
- 1 small head of broccoli, chopped
- 1 small head cauliflower, chopped
- 1 cup mayonnaise
- 1 cup sour cream
- 1/2 cup sugar (or 1/2 cup maple sugar, or 1/4 cup stevia-monk fruit blend)
- 1/2 teaspoon salt
- 1/2 pound bacon, cut in lardons
- 1 cup shredded cheese
Instructions
- Cook bacon lardons until crispy. Drain in colander over a bowl to catch drippings and set aside.
- Wash and chop broccoli and cauliflower into small pieces and place in a large mixing bowl.
- In a small bowl, mix the mayo, sour cream, maple sugar and salt until well combined.
- Mix the mayonnaise sauce into the cauliflower-broccoli mix and thoroughly stir in the bacon and cheddar cheese until fully incorporated. Refrigerate at least 1 hour before serving.
