After a rare shopping trip to Hudson’s, my mother and my five sisters and I would pile into the elevator and a very polite elevator person would ask us what floor and then drive us to The Mezzanine Tea Room. My mother would invariably ordered the shrimp salad sandwich on cheese toast. It was delicious–almost as delectable as the novel sophistication that I felt dropping softly around my shoulders as I looked around the tea room–definitely a step up from Campbell’s tomato soup and saltine’s elbow to elbow at our kitchen table.

JL Hudson Shrimp Salad on Cheese Jalapeño Bread
Makes 4 sandwiches
To make this sandwich sing, all ingredients need to be top-drawer fresh. And the cheesier the bread the better. On Wednesdays in Lyons, the St. Vrain Market bakers create an incredibly delicious loaf of cheese and jalapeño bread. Sliced thinly and toasted with butter this is a sensational snack! And add our simple shrimp salad recipe, and you’ve got a knockout lunch.
- 2 cups cooked, deveined and chopped large shrimp
- 1/2 cup Hellman’s or real mayonnaise
- 1/2 cup chopped celery
- Freshly ground pepper
- Loaf of cheese jalapeno bread
- Mix all ingredients, except bread, together and chill in the refrigerator.Toast bread and butter it before spreading shrimp salad mixture on it. Sit down and enjoy.
