A solid snow storm creeps slowly across Colorado, and the clouds are hanging low. But there’s no turkey in the forecast, at least not for a couple more days. What do we eat? Here’s an easy pre-Thanksgiving meal that’s simple to prepare, a great way to use up leftover potatoes, and one that’ll make everyone except vegetarians happy: Meat Loaf – Cold Weather Comfort Food.
Recipe – Meat Loaf – Cold Weather Comfort Food
Serves 8, Preparation Time: 15 minutes, Cooking time: 1 hour
- 2 pounds ground beef
- 1 pound mild Italian pork sausage, remove from skin
- 2 large cooked potatoes, diced
- 1 medium onion, chopped
- 2 eggs
- 1 cup Panko bread crumbs or 1 cup crushed saltines
- 1 1/2 teaspoons salt (Or 1 teaspoon, if you are using saltines)
- Pepper to taste
Preheat oven to 325 degrees Fahrenheit. Combine all ingredients thoroughly and place into a buttered 9 x 5 inch loaf pan. Bake one hour or until done.

Sometimes you want more than just the basic meat loaf recipe. Here are a couple ideas for boosting veggies and flavor in your meat loaf:
- You can work in more vegetables for fussy eaters and round out a complete meal by adding a cup of peas, green beans, or mixed vegetables of your choice.
- To embolden the flavor: add a chopped clove of garlic, a 1/2 teaspoon thyme and a 1/2 teaspoon rosemary
