Quick Almond Cake
Serves 8; Preparation time: 5 minutes; Cooking time: 30 minutes
- 2 1/2 cups almond flour
- 1 cup sugar
- 4 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 3 tablespoons raw sugar
- A handful of sliced almonds
- Preheat oven to 350 F.
- Prepare a cake pan by oiling, cutting parchment paper to fit the bottom and then oiling the paper.
- Combine in a food processor the almond flour, salt and sugar and process for 40 seconds.
- Add the eggs, blending after the addition of each.
- Add the extracts and blend until thoroughly mixed in, another 5 seconds or so.
- Pour into prepared cake pan and sprinkle with the raw sugar and sliced almonds, if you have them (I didn’t have any sliced almonds so I just sprinkled sugar!).
- Bake 30 minutes, until a toothpick comes out with a bit of cake crumb clinging to it.
- Let cool in the pan for two minutes then loosen the edge with a knife and invert onto a wire rack. Let cool.
- Re-invert cake onto a cake plate and serve.

Hi Sarah!! I knew because we Earth Girls of the 70s have stuff like that in our cabinets! It’s such an easy and quick recipe and really quite elegant, too! It is very pretty using almond flour as well; as you can see from the pics, I used the raw almond flour. You will love it but let me know what you think. Hope all is healthy in your world!!xo
