Crunchy Broccoli and Cauliflower Salad with Bacon
A classic and easy Midwestern summer salad
- 1 small head of broccoli, chopped
- 1 small head cauliflower, chopped
- 1 cup mayonnaise
- 1 cup sour cream
- 1/2 cup sugar (or 1/2 cup maple sugar, or 1/4 cup stevia-monk fruit blend)
- 1/2 teaspoon salt
- 1/2 pound bacon, cut in lardons
- 1 cup shredded cheese
Cook bacon lardons until crispy. Drain in colander over a bowl to catch drippings and set aside.
Wash and chop broccoli and cauliflower into small pieces and place in a large mixing bowl.
In a small bowl, mix the mayo, sour cream, maple sugar and salt until well combined.
Mix the mayonnaise sauce into the cauliflower-broccoli mix and thoroughly stir in the bacon and cheddar cheese until fully incorporated. Refrigerate at least 1 hour before serving.
