Crunchy Broccoli and Cauliflower Salad with Bacon

A classic and easy Midwestern summer salad

Ingredients
  

  • 1 small head of broccoli, chopped
  • 1 small head cauliflower, chopped
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/2 cup sugar (or 1/2 cup maple sugar, or 1/4 cup stevia-monk fruit blend)
  • 1/2 teaspoon salt
  • 1/2 pound bacon, cut in lardons
  • 1 cup shredded cheese

Instructions
 

  • Cook bacon lardons until crispy. Drain in colander over a bowl to catch drippings and set aside. 
  • Wash and chop broccoli and cauliflower into small pieces and place in a large mixing bowl. 
  • In a small bowl, mix the mayo, sour cream, maple sugar and salt until well combined.
  • Mix the mayonnaise sauce into the cauliflower-broccoli mix and thoroughly stir in the bacon and cheddar cheese until fully incorporated. Refrigerate at least 1 hour before serving.
