Chicken Fresh Tomatoes and Mushrooms

Chicken breast, tomatoes and mushrooms combine to make a simple, delicious and inexpensive dinner.

Ingredients
  

  • 1 large skinless, boneless chicken breast sliced horizontally in two
  • 2 large fresh tomatoes peeled, and roughly cut
  • 4 ounces fresh mushrooms sliced
  • 3 - 4 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup grated parmesan cheese

Instructions
 

  • Sauté sliced mushrooms in 2 tablespoons of EVOO in a medium sized pan until the juices begin to be released. Add tomatoes, stir, season with salt and pepper and cover. These should cook about 10 minutes until the moisture in the pan is right for a heavy sauce that will sit on top of the chicken breast cutlets without sliding off.
  • Tenderize chicken breast and season both sides with salt and pepper.
  • Remove tomato mixture and place in small bowl. Set aside in a warm place.
  • Sear the chicken breast cutlets in a hot pan in 1 or 2 tablespoons of the olive oil until they are browned, about 5 minutes on each side.
  • Turn the heat down and ladle the tomato sauce over each cutlet. Sprinkle with parmesan cheese. Cover and let cook over medium-low heat until the cheese has melted, about 2 minutes. Serve.
